Brian Hazen Highlights Poppycocks, a Favorite Breakfast Spot in Aspen

Continuing through my list of favorite places to eat breakfast in Aspen, I most recently had a memorable breakfast at Poppycocks. Owners Paul and Bee Po as well as loyal staff members Cathy and Ned make Poppycocks a long-time local establishment that has been a favorite dining spot of mine for many years. The obvious favorite–the world-famous oatmeal buttermilk pancakes–is of course delicious, but I tend to like a lot of syrup and butter on my pancakes.

When looking for something less sweet and slightly healthier, I order the Western omelet. It's cooked to perfection and is served with the perfect amount of peppers, ham, and cheese. I really dislike soupy omelets and many breakfast restaurants tend to undercook eggs. The Western from Poppycocks is firm, and my cheese selection, Swiss, compliments the ham and peppers perfectly. The omelet makes for a deliciously filling meal, keeping me satisfied until lunch.

I also love the cozy location and outdoor patio option on a warm summer day. Typically, you will see an acquaintance while dining there, and I enjoy the unscheduled opportunity to catch up with locals over a cup of coffee. Hope to see you there!
